Cauliflower & Hot Honey Savoury Doughnut

As part of our SUMMER OF SAVOURIES campaign, we have teamed up with Adam Purnell, @shropshire.lad food influencer & owner and chef at Embers. 

Ingredients: 
1 Large Cauliflower- slice into florets
2 Bags of Doritos Tangy Cheese Crisps 
1 small carton of buttermilk 
Paprika 
Blue Cheese
2 Stalks of Celery - thinly sliced
1 Planet Doughnut Hot Buffalo savoury doughnut bun, cut in half 
Hilltop Hot Honey

Instructions:

Prepare the cauliflower:
  • Cut the cauliflower into florets
  • Bring a large pot of water to boil 
  • Place cauliflower florets into the boiling water and cook until slightly soft - about 3-4 mins 
  • Remove the cauliflower and place on a cooling rack to drain and cool 
  • Season the cauliflower with paprika
Crush Doritos:
  • Using a pestle and mortar, crush Tangy Cheesy Doritos until they become fine flakes 
Coating the Cauliflower:
  • Empty half carton of buttermilk into a bowl 
  • Add seasoned cauliflower florets into buttermilk, ensuring they are completely drenched
  • Remove cauliflower from buttermilk and place into a bowl of crushed Doritos, coating completely 
Frying Cauliflower:
  • Heat a shallow pan with a light layer of oil over medium heat   
  • Lightly fry the coated cauliflower florets until golden brown, turning occasionally to ensure even cooking
  • Remove from the pan and place onto cooling rack again 
Preparing Blue Cheese Sauce:
  • In a bowl, use a form to crush blue cheese
  • Add the remaining half of buttermilk and season with paprika 
  • Mix
  • Add thinly sliced celery to the blue cheese and mix
Assemble:
  • Cut Planet Doughnut's Hot Buffalo savoury doughnut bun in half 
  • Spread generous amounts of blue cheese sauce onto the base of the bun 
  • Place a few celery leaves on top of the sauce for garnish 
  • Add the friend cauliflower florets on top of the celery leaves
  • Drizzle generously with hot honey
  • Place the top half of the savoury doughnut and enjoy
